Pumpkin seed pesto

Pumpkin seeds are very underrated, and very healthy!

Ingredients

60g pumpkin seeds 60g parsley
60g basil leaves
2 garlic cloves, crushed 1 Tsp sea salt
2 Tsp lemon juice
60g parmesan cheese (optional) 90ml cold pressed olive oil

Method

  1. Put all the ingredients, except the olive oil into a blender or food processor until the ingredients are blended.
  2. Add the olive oil and stir well.
  3. Store the pesto in an airtight container and use within a week.

AFTERNOON SNACK SUGGESTIONS

Choose a piece of fruit and enjoy 2 oatcakes with pesto afterwards. If you would like to improve your digestion it is best to wait at least 15/20 minutes minimum after eating fruit before you eat anything else.

The reason for this is because when fast digesting fruit is eaten together with proteins and starches the fruit is not digested properly. When your food is not digested properly it will ferment in your digestive tract which can cause you to experience bloating, gas and indigestion. To gain the best nutritional quality from the fruit as well as good energy and weight loss its best to provide the time for your body to fully digest the fruit if you do experience any of the above mentioned symptoms.
