Vegetables and feta
Make a meal of vegetables
1 large onion, medium slices
Olive oil to brush vegetables approx 4 oz
2 large courgettes, medium slices
2 peppers, (1 yellow and 1 red) seeded and each cut into 8 sections
1 large aubergine, sliced into 1/2 inch thick rounds
1 large red onion, medium slices
1 or 2 cloves of garlic peeled and smashed with the flat side of knife
400 grams of mushrooms, sliced
Salt and pepper to season
Feta cheese, cubed with herbs
- Pre heat oven to a medium high temperature (Gas mark 6 or 7)
- Clean, then chop all the vegetables brush lightly the vegetables with olive oil.
- Place in oven.
- Cook until tender with edges slightly browned. Time will vary depending on type of oven used.
- Add the feta cheese before serving.
Top tip: Place the cut vegetables in a clean plastic bag, add oil and shake to ensure good coverage.
