Vegetables and feta

Make a meal of vegetables


1 large onion, medium slices
Olive oil to brush vegetables approx 4 oz
2 large courgettes, medium slices
2 peppers, (1 yellow and 1 red) seeded and each cut into 8 sections
1 large aubergine, sliced into 1/2 inch thick rounds
1 large red onion, medium slices
1 or 2 cloves of garlic peeled and smashed with the flat side of knife
400 grams of mushrooms, sliced
Salt and pepper to season
Feta cheese, cubed with herbs


  1. Pre heat oven to a medium high temperature (Gas mark 6 or 7)
  2. Clean, then chop all the vegetables brush lightly the vegetables with olive oil.
  3. Place in oven.
  4. Cook until tender with edges slightly browned. Time will vary depending on type of oven used.
  5. Add the feta cheese before serving. 

Top tip: Place the cut vegetables in a clean plastic bag, add oil and shake to ensure good coverage.
